The HACCP, that is Hazard Analysis and Critical Control Points, is a certification based on a system of risk analysis and control of critical points, which provides a set of procedures, aimed at ensuring the healthiness of food, based on prevention rather than analysis of the final product.
The HACCP is based on the control of the “processing points” of food in which there is a danger of contamination, both biological, chemical or physical. It is systematic and has scientific basis; its purpose is to identify and analyze hazards and develop suitable systems for their monitoring.
The head of the food industry must identify all the critical points (CCP) of the various activities and identify, apply and update the safety procedures (based on the HACCP principles).
The EC Decree 852/04 (European Food Legislation) requires flooring suitable for food, but also resistant and easily washable: flooring must be kept in good condition, be easy to clean and, if necessary, to disinfect; this requires the use of resistant, non-absorbent, washable and non-toxic materials.

HACCP is a certificate provided for food companies and beyond. The HACCP standards are required to apply: pharmacies, operators in the field of catering, bars / patisseries, food and fruit and vegetables, butchers, fishmongers, bakeries, schools, canteens, communities in which food is administered and all those interested in the primary production of a food (collection, milking, breeding), its preparation, transformation, manufacture, packaging, storage, transport, distribution, handling, sale or supply, including administration to the consumer.
Foods are also drinks, therefore also kiosks, discos, cinemas, festivals, tasting events, etc. must apply HACCP.
